May is finally here and we absolutely love the month of May at Healthful Life MD! Anticipation of upcoming summer adventures is putting smiles on peoples faces everywhere. Neighborhoods are coming out of hibernation and you can hear laughter in the streets again. People are getting outside enjoying the warmth and beauty of the Colorado sunshine. Kids are buzzing as they wrap up their last few weeks of school. Plus, May gives us amazing reasons to celebrate—Star Wars Day (May 4), National Dance Like A Chicken Day (May 14), Lucky Penny Day (May 23) and good ol' Memorial Day (May 28)

Exercise Reimagined: HIIT for Middle-Agers

There is something about reaching “middle-age” that is rather shocking. You know it is coming, of course, but the first time a nice, young barista at the coffee shop calls you “Ma'am” or “Sir”, it is a little alarming. Your mind still identifies with a hip, twenty-year-old version of yourself, but somewhere along the way your life drifted. Now you have a job, responsibilities, a family, and exactly zero time to invest in things that were once a priority in your life—health and exercise many times topping that list.  

You did not intentionally stop working out, but there simply is not enough time in the day to do everything. When time starts to gets squeezed, exercise seems like an easy thing to let go. It is for this exact reason that HIIT has become extremely popular.

Pea Hummus

Peas are a great spring vegetable, and this Pea Hummus recipe from Epicurious is an amazing and creative way to incorporate them into your menu. Add the hummus as a dinner side, or grab some for a quick snack. It is a bit sweeter than your traditional hummus, but is really delicious and the bright green color just makes you feel like spring! 

Ingredients: 
  • 1 10 oz package frozen peas 
  • 1/2 tsp ground cumin
  • 1/2 cup fresh cilantro leaves
  • 1 to 2 garlic cloves
  • 1/4 cup well-stirred tahini (Middle Eastern sesame paste)
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
Thaw frozen peas and drain if there is liquid left. Add cumin, cilantro and garlic (to taste) to a food processor and finely chop. Add peas, tahini, lemon juice, salt and pepper and purée. You can use fresh mint instead of cilantro if you prefer—we would suggest using 1/4 cup mint rather than 1/2 cup as with the cilantro.

Golden Area Adventures

The sun is shining and temperatures are warming up in Colorado, sure signs it is time to get outside and get moving. These are a few of our favorite FREE, family friend places to visit in the Golden area.

Golden History Park
Golden History Park is home to many of the original buildings from the Pearce Ranch in Golden Gate Canyon. Stroll through this park and imagine yourself growing potatoes or raising chickens as part of a homesteading family.

Dinosaur Ridge Trail
The Dinosaur Ridge Trail is world-famous for dinosaur tracks and bones and unique geologic features. The Trail has more than 15 fossil and geologic sites, each marked by interpretive signage, and can be accessed by foot, bike, or guided bus tour.

Lookout Mountain Nature Center
Lookout Mountain Nature Center inspires kids and adults to connect with the natural world. Interactive exhibits take visitors on a tour of the flora and fauna of the foothills ecosystem. Kids enjoy a hands-on play room and observation room and everyone can enjoy a walk through the nature preserve while visiting.

Boettcher Mansion
The Boettcher Mansion provides a rare combination of historic authenticity and modern amenities from its secluded setting inside the Lookout Mountain Nature Preserve. The mansion was built in 1917 as a summer home and seasonal hunting lodge for Charles Boettcher.

More than 12,000 acres of dense forest, rocky peaks, and aspen-rimmed meadows laced with miles of trails awaiting hiker, horseback rider and mountain biker enthusiasts. Golden Gate Canyon has two different campgrounds, stocked fishing ponds, picnic sites and the Panorama Point Scenic Overlook, where visitors can see 100 miles of the Continental Divide.
